Hello my lovelies, here today to bring you an easy peasy low carb keto cheesecake. And a passionfruit one at that! Passionfruit is one of my top five flavours, along with lemon, coffee, raspberry and of course chocolate. Then I’d add in lime if I was doing my top six, but it’s a lot like lemon so it doesn’t make the top five. This low carb keto cheesecake is a no-bake one. I repeat NO BAKE, that’s what makes it easy peasy.
If passionfruit is not your thing, then in this low carb keto cheesecake recipe you can sub in any flavour you like. I went with passionfruit as I had made some low carb keto passionfruit butter and wanted to use that. Fresh or frozen passionfruit works just as well. As do things like lemon, raspberry, strawberry, vanilla, blueberry and blackberry.

In the video, I made individual cheesecakes, but I have also made it as one big flan cheesecake. Either works just as well. Depends what you want to do with it. I like the individual portions to send in school lunches. Whereas I like the flan if we are going to have family over for lunch and eat the whole thing for dessert.
This one is super easy to make. The base comes together in minutes and you refrigerate it to set. While the base is in the fridge, mix all the other ingredients, and BOOM it’s a low carb keto passionfruit cheesecake on your plate. With a coffee, I hope.

Passionfruit are super cheap right now where I shop. I can get ten for $5. So that’s why I made the passionfruit butter in a huge batch. But, as I said fresh passionfruit, about two to four, and frozen passionfruit (defrosted) work just as well. Remember, all my recipes are easy, peasy, low fuss, no muss type affairs. So don’t go expecting a flaming Bombe Alaska!

This passionfruit butter is a great way to use up cheap passionfruit and add another twist to your keto treats. Great straight on keto toast, or as I have done, used in a recipe. Passionfruit butter keeps in the fridge for about a week, but it doesn’t last that long in our house.
