Recipe | Lemon Keto Cookies | Low Carb + GF

Lemon cookies, who doesn’t love a lemon cookie. Here is a keto friendly version. Make mine low carb and we are on for a coffee date. So let’s make some lemon keto cookies. I add these lemon keto cookies to the kid’s school lunch boxes instead of heavy carb treats like bliss balls or regular cake.

These are simple, super quick and use standard ingredients. If you prefer something more savour then go try the keto scrolls, bacon and cheese is my go to variety. Although there is a jam rolly polly inspired version too.

INGREDIENTS
1 1/2 cups almond flour/meal
1/2 cup coconut flour

1/2 cup monk fruit sweetener

1 tbsp monk fruit golden if you want a sugar top

1/2 cup butter
2 eggs

2 tsp cream of tartar
1 pinch of pink salt
1 tsp baking powder

1/2 tsp xanthan gum

1 tbsp lemon zest

2 tbsp lemon juice

METHOD
Mix the dry ingredients together. Preheat your over to 180c / 350f

Mix wet ingredients together. Add to dry and mix until it is a dough.

Make balls the size you want, I do smallish ones, about 3.5cm across. If you want the sugar top dip the ball into the monk fruit golden. Place on a baking tray lined with baking paper. Use two fingers to squish the ball down a little to make the cookie shape.

Bake at 180C for about 12 – 15 minutes. Let cool slightly on the tray. Then cool fully on a wire rack. Eat, with or without a bit of butter on top.
