As you know from my Gingerloaf post I love Melinda and want to share the love with you. Whether you run a gluten free family like we do, or want a gluten free cracker to take to a coeliac friend or you just think gluten free is the way to go, Melinda has your back. This one is super special, as in addition to gluten free, it’s also very low carb and keto friendly too. I added fresh raspberries, about 1/2 a cup, to make berry muffins, as it was a birthday cupcake type of thing. I dressed them up as cupcakes for that 11 year old party vibe.

Verdict – just full on yum. Great consistency, good flavour, very cake-y and no one knew how good they were for them as they tasted like a treat should.

While we stay home to stay safe get your Melinda lower carb muffin mix from the Low Carb Emporium. The name behind the Melinda’s range is a real Melinda, Melinda Trembath. Melinda is a qualified nutritionist and it was through her own battle as a coeliac that she created gluten-free products. So out of necessity a business was born. Products are made right here in Australia so you are assured of the quality and workplace practices.

Follow the instructions on the box as they are super accurate. Add berries like I did, or choc chips or 101 other muffin-licious combos. Eat as is, lather on the butter as per my kids preference or go that extra step and top with cream and sprinkles. However you end up eating your muffins you will be glad you made them in the first place. Go get your muffin on! Cheers Le
