So now I am in the keto club I wanted to find a good low carb muffin recipe. Better yet a convenient one, so we are back with Melinda and her gluten free goodies in a box. NEWS FLASH …this time with 80% lower carbs than other mixes. Only 5.3 grams of TOTAL carbs per muffin, with 1.8 grams from sugar. This means you can have a yummy, big ole muffin and keep ketosis kicking along. Happy days are here! I can have my cake and eat it too.

As you know from my Gingerloaf post I love Melinda and want to share the love with you. I added fresh raspberries, about 1/2 a cup, to make berry muffins, as it was a birthday cupcake type of thing. I dressed them up as cupcakes for that 11 year old party vibe.
Verdict – just full on yum. Great consistency, good flavour, very cake-y and no one knew how good they were for them as they tasted like a treat should.
