I needed to find a good low carb, keto friendly cracker to pal up with my cheese. So we are back with Melinda and her gluten free goodies in a box. As you know from my Gingerloaf post I love Melinda and want to share the love with you. Whether you run a gluten free family like we do, or want a gluten free cracker to take to a coeliac friend or you just think gluten free is the way to go, Melinda has your back. This one is super special as in addition to gluten free, it’s also low carb and keto friendly too. I am currently doing my own self styled low carb/keto four week home challenge, so this ticked all the boxes.
- Prep 6 easy minutes
- Cook 30 simple minutes
- Makes two trays
- Skill – the thing before easy
- Ingredients – water
- Keto + Low Carb
- Kid Friendly
- Gluten Free + Dairy Free
Verdict – yum yum yum. Yum with butter, yum with cheese, yum with peanut butter my husband just told me. Kids love them, I love them and the mister loves them. So a big THUMBS UP.
I have tried to make seed crackers before and they have never held. So this one is a STAR! The fact that it came out of a box is a blinking miracle. All pre-measured and sorted, literally just add water. You will want two baking trays and baking paper. Plus squish them thin is my advice. I used the recommended method of squishing down with another sheet of baking paper. Worked a treat.
So yummy, ate them straight from the tray with my cheese and lime and soda. Felt like I was in Sunday afternoon heaven. I love cheese and crackers. I wasn’t sure I could find a good keto / low carb cracker, but I have. It was the freshness that got me. You know you just can’t beat the make it and eat it scenario.
While we stay home to stay safe get your Melinda seed crackers from the Low Carb Emporium. The name behind the Melinda’s range is a real Melinda, Melinda Trembath. Melinda is a qualified nutritionist and it was through her own battle as a coeliac that she created gluten-free products. So out of necessity a business was born. Products are made right here in Australia so you are assured of the quality and workplace practices.
Follow the instructions on the box as they are super accurate. Eat as is, lather on the butter as per my kids preference or go that extra step with peanut butter. However you end up eating your crackers you will be glad you made them in the first place. Go get your cracker on! Cheers Le
